Today I present to you my personal comfort food.
It is a mix of rice, buckwheat and millet topped with a rocket and olive pesto.
Advice
You can also use rocket pesto to dress pasta.
For a more intense aroma you can replace the basil with rocket in variable proportions, according to your tastes.
You can replace the powew garlic with raw garlic, and blend it with the rocket and olives.
Ingredients
320 gr of rice, buckwheat and millet
70 gr of rocket
gr pitted olives
1 small onion
garlic powder
extra virgin olive oil
Preparation
In a saucepan put 300 ml of water and a finely chopped onion, put it on the stove and when it boils pour the mix of rice, millet and buckwheat, stir, turn off the heat and cover with a lid.
The mix I use requires 16/18 minutes of cooking.
For the pesto, wash the rocket and remove the excess water, do not use the centrifuge for the salad, it must make it more humid, and put half of it in the immersion glass with the olives.
Blend with patience and season the freshly prepared rice with the pesto, two tablespoons of extra virgin olive oil and a sprinkling of garlic powder.
Above I put sesame and hemp seeds
