Good morning my friends and happy weekend, easy delicious and small cheese pies for everyone, let’s do it together step by step
Ingredients
1 cup strained yogurt 200 g.
150 g melted and cold butter
180 grams of sunflower oil (or corn oil)
500 grams of self-raising flour (approximately)
3 tbsp finely grated kefalotyri
1 tbsp. sharp baking powder
2 pinches of salt
some freshly ground pepper
For top
egg yolk
sesame or black sesame
For the filling
250 g feta cheese cut in pieces
100 g grated kefalotyri
a little pepper
1 egg
Preparation
We start the recipe for the crunchy and easy kourou cheese pies with yogurt by first making the kourou dough.
Put in a bowl the yogurt, the butter, the oil, the kefalotyri, salt and pepper and mix.
Add the flour with the baking powder and mix. The dough for the kourou cheese pies with yogurt should be oily and soft.
Cover and let the dough rest for 20 minutes.
In another bowl put all the filling ingredients for the kourou cheese pies and knead them.
We take small balls of dough, we press them with our palms to become flat. Put a little filling in the center, close and press the joints with a fork. Kouros dough with yogurt is soft and oily like soft plasticine. Do not panic if the dough pops or opens while you are baking. It sticks easily by hand.
After we finish all the kourou cheese pies (two plates), dissolve the yolk with a little milk or water and spread them with a brush. If you want, sprinkle their surface with a little sesame.
Bake the kourou cheese pies in a well preheated oven at 180 degrees C in the air for about 30 minutes, until golden brown.
In between the baking, we raise and lower the pans so that they are baked evenly.
Kourou cheesecakes are soft when they come out of the oven, but when they cool they become crunchy like a cookie. If the kourou cheese pies pop in the oven, remember that this dough is like a cookie and this is normal. It is not like bread dough.
