100 gr. granulated sugar

3 tbsp. dry yeast

Zest of one orange

3 large eggs

120 ml milk, whole lukewarm

3/4 kg salt

150 gr. butter, frozen and diced

2 yolks, diluted in a little water



Put half the sugar, the yeast, the orange zest, the milk in the bucket of the mixer, mix with the wire and leave them for 10 minutes.

Pour the other half of the sugar into the multi together with the machete, the mastic and beat them until they dissolve completely.
Then, add the flour, the mixture with the sugar to the bucket of the mixer and knead them with the hook at high speed.
Then, stop the kneading, add the eggs and with the hook start and knead. Reduce the speed of the mixer and add the salt and slowly the butter, then increase the speed and knead for 10-15 minutes until the dough has a chewy dough.
Lightly grease a bowl and place the dough inside. Cover with a towel and let it rise for 1 hour. Once the dough is ready, take half and divide it into 4 equal parts and start molding each piece into 15cm long strips. about.
Then we make the braid strips and as it is the bun we place it on a baking tray with oil glue, we repeat the same process with the other half of the dough to make two buns. Cover them again with a towel and let them rise for another 30-40 minutes. Then spread them with 2 yolks diluted in water.
Bake in a preheated oven at 170 ° C in air for 20-30 minutes.
Once it is ready, remove it from the oven, leave it to cool for 5 minutes and serve.
