For the sheet

1 kg flour for all uses (hold a little to open the leaves)
1 tablespoon chopped salt
1 cup olive oil
lukewarm water, as long as it takes (about 1 cup)
1 cup phytin, to open the leaves

For the filling

1 kg of spinach
2 large dried onions
60ml oil (corn oil)
2 leeks (white and tender green part), very finely chopped
2 tablespoons dill, finely chopped
1 teaspoon black pepper
2 full tablespoons yogurt
3 eggs
500g white cow cheese
1 cup oil (corn oil) for baking the pie


1. Prepare the dough for the sheet

Combine the dough ingredients in the mixer, adding a little warm water and kneading at the same time, to make a dough that does not stick to the hands. If we knead by hand, we make the flour and we put the salt, the oil and the water in a puddle in the center. Knead well for 5 minutes. Mrs. Anna uses Mana flour, because it is very soft flour and makes a tender pie sheet.
Cover the dough so that it does not dry out and leave it for half an hour or more. This will allow the sheet to open better and not "pick up" when we try to open it.

2. Prepare the Macedonian puff pastry

Divide the dough in two. We cover the second piece, while we work on the first.

Roll out the first piece of dough into a thick round sheet. Carve a circle or rectangle, depending on the pan and cut with a knife 12 rays. Smear the whole leaf with phytin.

We take one of the rays, we spread it with our hands to make it as central as it is and we fold it over. Smear with phytin. We take the next piece, spread it and fold it on the central part. Smear with phytin. Continue like this until we fold all the rays on the central part. So we will have a thick circular or rectangular sheet.

Flour lightly, put on a plate and then in the fridge. Prepare the second sheet, following the same procedure. Put the second sheet in the fridge. That was all the work. We just prepared 24 sheets!

3. Spread the cheesecake

Grease the pan with corn oil. We open one sheet in a thin sheet, a little bigger than the dimensions of the pan to cover the sides.

Prepare the filling by beating the eggs in a bowl, adding the yogurt and rubbing the cheese with your hands. If the filling is tight, dilute with a little milk. Add pepper and salt, only if the cheese is not salty enough.
Pour the filling into the pan with the spread sheet. Open the top sheet, as long as the pan is. We do not need to push it down or make a fuss. We place it on the filling.

Smear the top sheet with plenty of corn oil. Cut the pie down to the pieces we want. The oil will enter everywhere and will swim the pie. It is not excessive. Without plenty of oil, a good pie is not baked! This will make it rosy and crunchy.

4. Bake the pie

Bake in a preheated oven at 200 degrees Celsius for about an hour. The pie will have swelled and come off the walls of the pan.
