Christmas leftovers

Ham was on the menu at our house Christmas evening among other things.

It was an 8 pound ham and there's only Gammy and me. We ate what we wanted yesterday and today then I trimmed up the bone and diced the ham up.

I got five 2 cup portions out of it that. I vacuumed packed them and threw them in the freezer.

Gammy will be pulling them out when she makes beans. They should be much tastier than the hog shanks we've been using.

I threw the bone, fat and gristle into a pot to simmer. I'll take it off the fire in a couple of hours, strain the broth and pack that, too. I don't know what she will use that for, but I know it'll be good.
