Recipe: Beef & Broccoli

I love anything Asian. This is one recipe that you hope to have many leftovers. Then you can eat it the next day without sharing.(lol) But seriously everyone should have a recipe box filled with all kinds of Asian inspired food. Then you would save on Chinese take out and less all the chemicals and MSG. Besides we all know that when you eat Chinese especially when your out in 1 hour you always are hungry again. As always tweak to your liking.


What you need:

1lb steak strips
4 tbsp low sodium soy sauce
2 tbsp dry sherry
1 tsp cornstarch(this will thicken)
1 bunch fresh broccoli florets
2 garlic cloves chopped roughly
2 tsp ginger chopped roughly
2 tbsp olive oil


For the Fried Rice:

3 cups cooked white rice
3 tbsp sesame oil
1 cup frozen peas and carrots mix
1 small onion diced
2 tsp minced garlic
2 eggs beaten
1/2 cup low sodium soy sauce


What to do:

Place steak in a bowl or seal-able bag.

Combine soy sauce, dry sherry and cornstarch. Mix well, and pour mixture over steak strips.

Marinate for 1 hour

Heat your pan and add oil. Add garlic and ginger saute over medium heat for about 30 seconds.

Add beef and saute stirring constantly for 5 minutes.

Add broccoli and stir fry for 5 minutes or until broccoli is cooked but still crispy and dark green.


What to do:

For the Rice:

In a pan heat sesame oil.Being careful add peas and carrots mix, onions and garlic til tender.

Lower the heat and add the eggs and saute until scrambled.

Add rice and low sodium soy sauce and blend well. Stir fry a few seconds or until heated thoroughly.

(After you make this, you will never want Chinese takeout ever again)
