Hello again, I hope you are well and you want to cook, because here I present you a new recipe
Ingredients for 2 portions:
2 sweet potato(es)
3 tablespoons of oil
salt and pepper
300 g mushrooms, e.g. mushrooms, porcini, chanterelles
1 spring onion(s)
Butter
½ Tin of kidney beans
1 tablespoon balsamic vinegar
1 tablespoon honey
For the dip:
100 g sour cream
1 tsp lemon juice
salt and pepper
Herbs to taste, fresh, finely chopped,
Preparation
Preheat the oven to 160 degrees.
Put oil and salt in a bowl and rub the potatoes with it. Now bake the sweet potatoes in the oven for about 40 minutes.
Meanwhile clean and quarter the mushrooms. Cut the onions into small cubes. Fry the mushrooms and onions in a pan with butter, salt and pepper. Drain the kidney beans and add them to the mushrooms in the pan. Add balsamic vinegar and honey and let the liquid boil down well.
Mix the sour cream with lemon juice, salt and pepper. Season with herbs.
Take the sweet potato out of the oven, cut lengthwise and fill with the mushroom mixture. Season with salt and pepper and serve with the dip.
