Lots of Dried Rosemary for Cooking!

We have started to plant herbs in one of our garden beds at home... but all of them are still too young and small to start ripping pieces off for cooking. This is especially true for the two rosemary fledglings, which would have enough leaves for several roast dinners before they were stripped bare. Quite likely, by the end of summer they will be more established, and definitely by the following summer they will be able to provide a nice ongoing stream of those tasty additions to lamb and roast potatoes...

... but for now, I've been raiding the garden of my parents-in-law. They do live quite close by... but it does get to be a bit of a hassle (for them... and me...) to keep dropping by to pick up a couple of sprigs of rosemary every time that I need it for cooking. So, the last time I came by, I made sure to grab a small bag of the rosemary leaves so that I could stick them in the dryer to have on hand as dried versions for cooking.

I have really started to enjoy using the dryer again... dried apples and fruit for the girls... and now starting on the batches of herbs. Buying herbs at the store starts to get quite expensive after a while... and you pay quite a bit for such a little pot of herbs. In fact, I'm going to make it a habit to dry lots of the herbs from the herb garden before they wilt in the incoming winter weather (Australian winter...).... and I have a good mind to also see if the lavender will also dry well as well. I'm going to also try some dried tomatoes... as always have some that we don't manage to finish, and I think that drying them might make a better use of the bags that we finish most but not all of... so, essentially everything EXCEPT for meat. I'm too scared of poisoning ourselves with those.

Ahhhh... and the end product of a day of drying in the machine... plus a house that smells quite nicely of rosemary. My oldest daughter loves the smell and taste of rosemary... she will often run her hand over the bushes to have the smell on her hand. She stayed up late to help me peel the dried leaves off the sticks and twigs... it is nice to do these little things together! While it lasts...
