Ingredients: Okra, green pepper, habanero pepper, tomatoes, eggplant, onion, zucchini, carrot, olive oil
Preparation: Pour boiling water over the tomatoes and scald them, peel them and cut them into small cubes. Cut the pepper into larger pieces. First, fry the onion, lobes and carrots.
Then add the peeled tomatoes. Stew the tomatoes, okra and carrots with tomatoes over a gentle heat for about 20 minutes.
Then add chopped green pepper and habanero pepper. When it is slightly soft, add the sliced eggplant and the whole and diced zucchini. Season everything with salt only and stew the vegetables until they are tender.
Dice the onion and garlic into small cubes. Cut the circle into slices and thick cubes of zucchini. Fry the onion and garlic in oil. Add tomatoes, okra, zucchini and simmer over low heat.
