Unusual shapes of edible mushrooms - Sparassis crispa (Cauliflower fungus)

    Sparassis crispa - Cauliflower fungus - The mushroom grows up to 20 cm high and 30 mm wide. However, there are larger specimens, the weight of which can reach several kilograms. The shape is irregular, spherical, oval. It does not have a single hat, it consists of many small twigs that are flattened, wavy and jagged at the ends. Lamellar, tufted shape. Over time, the edges of the mushroom twigs turn brown. The surface of the mushroom is smooth on both sides. Color is most often white, gray-white, sometimes cream, yellowish.

    The stem is short, thick, mushroom-colored, that is, white-gray. The flesh is white in color and has a waxy and fleshy structure. The smell is pleasant, spicy and nutty. The taste is also pleasant, mild and spicy.

    Occurrence: The fungus is found less and less frequently. It grows in summer and fall. It can be found in coniferous or mixed forests, with a predominance of pine forests, where it grows on the roots of pine trees, sometimes larch or fir.

    The protected fungus is on the list of species threatened with extinction. Value: Edible mushroom, very tasty.
