On Sunday morning we have a ritual to eat pancakes for breakfast. I love when my baby comes to wake me up very early, with a smile on his face because he can't wait for breakfast.
I smile from the kitchen when I see him waiting impatiently on the sofa, every two minutes he asks me if they are ready. After preparing the pancakes, I ask him to call dad, from the room he yells “Dad, the pancakes are ready !!”, with an intonation and rhythm that make me laugh too much and fill my heart.
Pancakes are one of the ways I have to show my love to my family.
The recipe for wholemeal pancakes that I present to you is without added sugar.
Advice
If you prefer, you can substitute wholemeal flour with type 2 flour.
If you don't eat eggs, you can replace them with a banana puree.
Ingredients
200 gr wholemeal flour
250 ml of vegetable drink (almond milk, hazelnut, coconut, etc.)
1 egg
1 teaspoon of baking powder
fruit to taste for garnish
honey or fruit jam 100%
Method
Break the egg into a bowl, beat it with a whisk or fork, add the milk and stir in the sifted flour and baking powder. Mix well with a whisk until the batter is smooth and there are no more lumps. Heat a non-stick pan, sprinkled with a drizzle of extra virgin olive oil. When it is hot, take a ladle of mixture and cook it until bubbles form on the surface and the side in contact with the pan is golden. Now flip the pancakes and cook them on the other side until golden brown. The wholemeal pancakes are ready, it's time to stuff them to taste. To sweeten them, between one pancake and another you can put honey or 100% fruit "jam". For garnish, you can add juicy seasonal fruit.
