Good morning my friends, one of my favorite sauces for today , delicious, fast and very very hot and traditional . I will help you to create this

Ingredients

3-4 small cucumbers or a large, peeled zebra and 1-2 small for the decor, also peeled zebra

4-5 cloves of garlic melted in the special tool

Or a cup of olive oil

4-5 tablespoons red grape vinegar

Salt for the cucumber first and a little more afterwards

2-3 teaspoons grated black pepper

A little dill (2-3 cloves) finely chopped

250 grams of strained yogurt (preferably with 5% fat or whole)

Preparation

Grate the cucumber as mentioned above. Put it in a sieve and sprinkle with a little salt. Let it drain for a maximum of half an hour and then squeeze it in the palms of your hands or on a clean kitchen towel to dry completely.

Put the garlic, vinegar, pepper, dill and half the olive oil in a bowl. Stir and add the grated and well drained cucumber. Stir again with a fork.

Beat the yogurt with an egg beater (especially if it is low in fat) with a little olive oil to make it more creamy.

Add the yogurt to the mixture with the cucumber and mix gently with a fork from bottom to top.

Put the tzatziki in the fridge to cool well.

Before serving: Cut the cucumber diagonally into thick slices and salt them. Sprinkle them with a little vinegar and olive oil and put them on the tzatziki sideways until they are covered to the middle. Grate a little more pepper, sprinkle with a little olive oil and serve.

Stay safe and healthy my friends and take care of your people

My best wishes from Greece
