Foodbook #751 Grape must cookies - Moustokouloura


Good morning my friends with beautiful handmade cookies . Are you ready to do it together ???


Ingredients (for 60-65)

250ml must
250ml olive oil
150gr. sugar
1 teaspoon sweet baking powder
½ κουτ. baking soda
1 teaspoon sweet cinnamon powder
½ κουτ. sweet clove powder
1 shot of brandy or rakomelo
750gr. flour for all uses
100gr. Sesame


Pour the must, olive oil and sugar into a bowl and mix with a whisk. Dilute the soda in the brandy and pour them into the bowl. Continue to whisk together.
In a separate bowl, sift the flour and mix in the baking powder, cinnamon and cloves. Add them little by little to the must mixture, stirring with a spatula at first and then by hand until you get a soft dough that will not stick to the hands. It may not be easy to shape at first. But do not add flour to it, let it rest for 15 minutes and then you will see how easily it will be molded. Do not load your dough with flour because the cookies will come out hard and then you will be upset.
Preheat the oven to 180oC. Then shape round or whatever other shape buns you want and place them on plates lined with oil paste. Put the sesame seeds in a bowl, take the cookies one by one, dip them in the sesame seeds and leave them in place again.
Bake the buns in the air at 175 οC for about 20-25 minutes, until they swell slightly and brown nicely. After they cool, keep them in metal or glass containers.
