Ingredients
1 kg okra (frozen)
1 flitz. vinegar
1 chopped onion
1 clove garlic
5 ripe tomatoes, peeled and chopped or blended
½ flitz. chopped parsley
1 flitz. olive oil
1 tbsp. chopped sugar
salt
pepper
Preparation
We wash the okra to remove the water from the freezing process.
Put them in a colander and pour vinegar and salt over them (to remove their saliva) for 30 minutes.
Put the olive oil in a saucepan and sauté the onion and garlic. Add the okra and sauté them for 4 minutes.
Add the tomatoes, a little water (about half a cup), salt, pepper, sugar and shake the pot. From this point on, do not stir the okra again so that it does not melt.
Simmer for about 10 minutes while preheating the oven to 200 ° C.
We empty the food in a pan and cover it with oil paste. Put in the oven and lower the temperature to 180 ° C. Bake for about 20 to 30 minutes.
Serve the food almost hot, sprinkle with parsley.
