2 colored peppers
250 ml tomato juice
150 ml olive oil
1 glass of water
Preheat the oven to 190 degrees. Cut all our vegetables first in the middle vertically and then in pieces as thick as a cherry tomato.
Spread them on a baking sheet and add salt and pepper.
Add the tomato juice, water and olive oil and mix well.
Add a little chopped parsley and cook for 45 minutes to 1 hour.
When ready, serve with fresh chopped parsley and a little fresh olive oil.
Tip: Briam needs enough oil in cooking and not so much water. In this way we achieve the baking and not the boiling in our vegetables and they are nicely baked in the oven.
Apart from the briam in the oven, there is also the briam of the pot and many people even put feta cheese while it is being baked in the oven. This recipe will definitely become your favorite and do not forget, the fresher the vegetables, the tastier the briam!
