Foodbook #593 Greek fish “bakaliaros” with greens

Good morning my friends , let’s create something different for today that you will love it.

1,300 gr. salted cod fillet, salted and cut into medium pieces
500 gr. herbs for pies such as lapata, kaukalithres, dill, parsley, etc., cleaned, washed and cut into smaller pieces
the white and tender green part of 3 leeks, cut into slices
1 large onion, finely chopped 200 ml olive oil
150 - 200 gr. seedless raisins or prunes (optional)
salt, freshly ground pepper

Rinse the salted cod well and put it in a spacious pan with plenty of water and leave it for 12 - 24 hours, until it softens and relaxes. Every 4-6 hours, empty the utensil of water and refill it with fresh.

Preheat the oven to 180 ° C. In a deep saucepan, put the greens, leeks and onion, cover the saucepan with a lid and leave on medium heat for about 3-4 minutes, or until steamed and reduced their volume. Pour them into a medium pan or pyrex and lightly salt them.

Put the pieces of cod evenly on the grass, with the skin facing up. Sprinkle with plenty of black pepper, pour in the oil and 200 ml of water. Sprinkle the raisins or plums (if you put) and cook for about 1 hour or until the cod is cooked and browned.

Tip: If we want, we can add from the beginning, 1 tsp. tomato paste, dissolved in 100 ml of water.

Stay safe and healthy my friends and take care of your people

My best wishes from Greece
