Foodbook #491 baked octopus

Good morning my friends, a very special recipe for all of you today with delicious octopus and a lot of lemons , let’s create something magnificent

1 large octopus
1 glass of wine vinegar
1 bay leaf
4-5 spices
olive oil and vinegar for serving

We clean the octopus (we take out the tooth and the eyes), we wash it and we place it in a big pot. Add the vinegar, the bay leaf, the spices and boil it at a moderate temperature with the lid closed for about 45 'or more, (until it softens well and stings comfortably with the fork.)

Once the octopus is ready, take it out of the pot, leave it to cool and then cut it into small bite-sized pieces.

Serve on a plate with a little olive oil and if you want a little vinegar and sprinkle with oregano.
We can keep the octopus that will be left in the fridge by putting it in a glass container that closes well, adding oil and vinegar in equal proportions to cover it.

Give this a try and I am pretty sure that you will not change it for nothing

Stay safe and healthy my friends and take care of your people

My best wishes from Greece
