8 large eggs,
oil (or oil spray) for spreading,
1 cup milk,
½ φλ. ham (or paris) in small squares,
½ φλ. green + ½ fl. squared red pepper,
1 diced tomato,
1 chopped spring onion,
1 teaspoon fresh thyme leaves,
1 cup grated kefalotyri (or cheddar or gouda),
Salt Pepper


Step 1
Preheat the oven to 180 ° C and grease (or spray) an oven tray (approx. 20 x 20 cm) or 5 individual soufflé utensils.

Step 2
Whisk the eggs in a large bowl with the milk and salt and pepper to homogenize and add the ham, peppers, tomato, onion, thyme and cheese.

Step 3
Distribute the mixture in the pan or rameken and put it in the oven. Bake the omelette uncovered for about 45 minutes until thickened.
