Foodbook #437 chickpea stew with lemon


Easy , tasteful and very healthy soup for today my friends, with very short list of ingredients and a few steps from super market to your plate , let’s see


400 g chickpeas
1 large onion, finely chopped
2 bay leaves
50 ml olive oil
3 kg flour or corn flour
juice of 1.5 - 2 lemons
4 kg of salt
½ kg pepper


From the previous day, if the chickpeas are by the kilo, I clean them by removing any damaged or oils and rinse them very well with plenty of cold water 2-3 times. I put them in a large bowl with twice the volume in water together with 2 kg of salt (or baking soda). I leave them for at least 12 hours.
The next day I rinse them and put them in a pot with water to cover them 2-3 cm, at high intensity to boil.
I leave them for 5 minutes and with a spoon I remove the foam that they create on the surface.
Add the onion, bay leaves, olive oil, 2 kg salt and ½ kg salt, cover the pot with the lid and from the moment it whistles, put the fire on low heat and leave for 30 minutes (the time varies depending on the variety of chickpeas).
When the time has passed, I carefully open the pot and after dissolving the flour in 50 ml of water, I throw it in the pot, stirring gently to distribute it evenly and I let them boil until the juice "binds".
I take it out of the stove, I add the lemon juice, little by little, I try if I want more I add and check the salt or the pepper.
Stir by shaking the pot from the handles (so that the legumes do not dissolve) and serve.
