Ifor the dough:
500 grams of self-raising flour
200 grams of yogurt completely strained
180 grams of butter at room temperature
150 ml of seed oil
1 pinch of salt
350 grams of grated feta cheese
350 grams of gouda grated cheese
150 grams of sliced ham, diced
200 ml sour cream
some freshly ground pepper
Make the dough as follows:
In a medium bowl, add the flour, yogurt, seed oil, salt and butter, which we have left at room temperature for at least 2 hours. Knead the ingredients by hand and leave the dough aside.
For the filling now:
Simply pour all the ingredients (feta, gouda, 3 eggs, chopped ham, sour cream and pepper) in a bowl and mix with a spatula to homogenize.
Butter a tartiera or a round pan with a diameter of 30 cm. Divide the dough into 2 equal parts. Half will go under the filling and half over.
From the. Of the dough we take small balls the size of a walnut and we press them between our palms to open them in round small leaves. We start and lay the bottom of the tartiera, sticking one dough next to the other, in such a way that we cover the whole bottom and the walls.
Then pour the filling and spread it evenly all over the tart. Finally, we take the second half of the dough that is left over and do the same process with the dough sheets to cover our tartiera from above and to completely close the filling between the dough.
This process with the dough sheets stuck next to each other is the simplest method of opening this particular dough that even a beginner can do. However, someone else can put the dough between two large pieces of oil paste, open it with the rolling pin and place it in the pan with great care because it dissolves easily!
Before baking, beat a yolk with a fork in a bowl along with 1 teaspoon of fresh water and brush it on our pie.
Bake in a preheated oven at 180 degrees in the air for about 45 minutes until you see that its surface turns golden!
