This is a difficult food to create cause it needs specific times and temperatures to take the amazing results of this very tasty and not expensive food.
Me and my wife cook this at special events so we don’t it one more time yesterday at our 3rd marriage anniversary.
We open the YouTube video from our favorites chef Akis Petretzikis and we follow the recipe step by step and believe me the results it’s truly amazing.
Recipe
Ingredients
For the pancetta
* 1 1/2 kilo pork belly, bones and skin removed
* salt
* pepper
* 1 tablespoon(s) olive oil
* 2 leeks
* 2 carrots
* 2 onions
* 2 stick(s) cinnamon
* 1/2 tablespoon(s) allspice berries
* 1 tablespoon(s) peppercorns
* 3 star anises
* 1 clove(s) of garlic
* 2-3 sprig(s) rosemary
* 4-5 sprig(s) thyme
* 50 g red wine
* 2 chicken bouillon cubes
* 1 liter water
* 1 tablespoon(s) mustard
To serve
* 4 potatoes
* 1 tablespoon(s) olive oil
* 1 tablespoon(s) thyme, +extra 1 tablespoon, to serve
* 1 clove(s) of garlic
Method
For pancetta
* Preheat oven to 180* C (350* F) Fan.
* Place a pan over high heat and let it get very hot.
* Score the pancetta with a sharp knife in a crisscross manner on both sides.
* Add salt, pepper and olive oil.
* Place the pancetta in the hot pan and brown on both sides.
* Transfer to a baking pan.
* Place the same pan over heat.
* Coarsely chop the leeks, carrots and onions. Add them to the pan.
* Add the cinnamon, all spice, peppercorns, star anise, garlic, rosemary and thyme.
* Sauté until golden.
* Add the wine, bouillon cubes, half of water and the mustard. Mix.
* Transfer to the pan, placing around the pancetta and add the water.
* Roast for 2-2 ½ hours.
To serve
* Transfer the pancetta and potatoes to a serving platter. Add the sping onion.
* Place a pan over high heat and add the sauce from the baking pan.
* Pour over meat and potatoes, sprinkle with thyme and serve.
