Located in Tamura-cho, Koriyama City, Fukushima Prefecture, Niida-Honke has been brewing 100% natural rice, 100% pure rice, and 100% natural sake with a delicious rice flavor since 2013. Natural rice is rice grown without using any pesticides or chemical fertilizers, and the Niida family is very particular about using only natural rice from contracted farmers. The water used for brewing is a blend of two natural waters: the well water from the company's own well near its own fields (hard water) and the spring water from the company's own mountain (soft water). This natural water is used for everything from washing rice to washing tanks, and the company also manages its 100-hectare (100-mile) mountain in order to protect the water. The company has installed equipment that meets strict water quality standards for the treatment of wastewater from washing rice and washing bottles, and the percentage of reusable bottles that can be washed and reused exceeds 95%. The "Niidashi Zensyu" brand is a juicy, sweet sake with a thick sweetness and a full flavor, and is characterized by the use of a raw sake base and a unique pumped-out four-stage brewing method. The rice used is naturally grown rice. The brewing water is medium-hard water. Some of the products are made with wild yeast, making it a hot brand right now.
