There's something about cooking with fire that makes a world of difference. It's one of the main reasons I never gave up BBQ'ing. I first learned to properly grill as one of my first jobs, being a short-hand cook in a burger joint, and we had grille-fired burgers and sandwiches, not that flat plate grille stuff where the food cooks in its oil, carbon and juices like a lethal soup. Nope, this was plain-old fire grilling on with the traditional cross-hatching black marks on the on burger when you were finished.

Since those days, I do a lot of other work that has nothing to do with cooking, but I still enjoy a warm Sunday afternoon or evening with a cold beer and a few burgers on the BBQ. It's a great way to end the week, sleep good and get prepared for the disasters every Monday brings in the morning. So, tonight, the BBQ was fired up, threw on some angus burgers as soon as the prime temperature was reached, and then I topped them with some spicy Monterey Jack cheese. The result was a double-patty juicy burger that you had to squeeze down to eat properly.
And now I'm ready to pass out and sleep coma-style until the morning. Bon appetite!
