Today I'll show you folks one of my favourite salad dressing of all time. I first came across this in the second restaurant I worked in back in the early 2000s on the 1000 Islands Parkway in the Heart of the St. Lawrence River!
You will need:
Ingredients
1 cup garlic. 2 shallots rough chopped. 600ml of canola oil. 1/2 tablespoon of Dijon mustard. 1/3 cup of honey. 1/2 tablespoon salt. 1/2 tablespoon pepper.
Equipment
Oven safe pan, food processor measuring cups & spoons. Strainer
Method
Put your whole garlic, rough chopped shallot and oil in a pan and place it in your oven @ 375 for 45 minutes. Once done strain oil into container and place garlic and shallots in another container. Let cool to room temperature or place in fridge or freezer to cool faster. Once cooled place garlic, shallots, mustard, honey, and balsamic vinegar in your good processor and blend well. Once well combined slowly drizzle in your oil to emulsify it. Once oil is in season with salt and pepper and store in container in there fridge.
