The Dream - I need your advice Pub0x fam!

So throughout my life I've worked many jobs in the restaurant industry. I got my first job in Armando's Pizza shop the day I turned sixteen years old. By the time I was nineteen I was working as a barback in Poli's restaurant in Pittsburgh. In between those two jobs, I worked as a dishwasher/prep cook at a fine dining establishment and a small hot dog shop called "J -n- J" that was nestled in between a Subway and a beer distributor.

That little hot dog shop was started by an alcoholic truck driver who just went through a brutal divorce. He dumped what was left of the tiny settlement he was left with to start his dream. This dream was no simple dream either. A lot of people who open a restaurant just do it because they think its a great way to make money (it is, sometimes) but aren't prepared and do not have a clear vision of the road ahead.

Not this guy. Joe had driven a big rig all across America and ate in the most famous fast food joints from Cali to Maine. Every time he found someone who did it the best he would pester them nonstop until they revealed their secrets. The best burger. The best fries. The best cheese sauce. 

I would eat there every day after school. He offered me job since I was showing up at 4pm every day anyway.

I learned how to make the best Belgian-process Pom Fritte (French fries) ever!

Sadly, the place closed down as he ran out of money. No one ever came in which was really strange. The place even had a Rampart arcade cabinet that I would play every night with my coworker.

Fast forward to today: I am the guy who just went through a brutal divorce.

Since the pandemic, I had totally given up on the idea of opening a restaurant (at least, storefront style I was thinking of a food truck.)

Just recently, something opened up that has a sentimental memory attached to it and my friend's business is next door.
