Making Wine, Part III

Hello Everyone! I hope you are having a Blessed and Prosperous day!

If you are following my posts, where I am sharing my wine making experience, then this is your update. To be honest, I was too busy and forgot to write an update the other day, as I continued the process.

You are supposed to let the wine must ferment for 7 days, before taking the next step. I was much too busy and was not able to do so. It actually ended up being 9 days, but that is not a big deal. That was last Friday. In fact the wine was supposed to be ready to bottle today, but, it is still fermenting. If you bottle the wine while it is still fermenting, the bottle will explode, or, the top will be blown off. This is because the fermentation process produces a large quantity of gasses.

To update you on the process, so far, I took my 2 churns of wine must and transfered the fermenting juice to a large glass jug. I used a funnel, in the top of the jug,  and a strainer to remove most of the blueberries in the must. There are still just a few that escaped the straining process. They will easily be removed when the wine is strained again and placed in inividual bottles.

At that point, I placed a tight cork stopper in my large glass jug. The cork had a small hole, in the middle, where I fed medical grade plastic tubing through it. I then ran the tubing into the cork hole. To finish that step, I then ran the other end of the tubing into a bottle filled with water. This allows the gasses to escape and prevents insects and other foreign matter from getting inside the wine. From there the wine should complete the fermentation process in another 7 days. Because the wine is being made inside the house, and the air conitioner is running, the temperature is a little too cool for the fermentation process to process at maximum efficiency. It looks like I will have to wait a few more days before I can bottle the finishe product.

Most likely, I will sample some this weekend, just to see what the taste is like. I will let you know in a future post.
