To start off the story properly, this was a work task which had a deadline of two days max. I was tasked to solve the ‘’minion cupcake’’ debacle. A pupil lost a cupcake and I had to reorder a new. Unfortunately (but also for obvious reasons) professional bakers do not take orders for one single cupcake. I decided to take it upon myself to recreate something like it with a twist of my own.
I watched a few videos on youtube about marshmallow fondant and I was instantly fascinated about how versatile this type of fondant is. And the marshmallow fondant journey began!
I used a very simple vanilla cupcake recipe I found online to be the base of the minion face. I chose to use mini marshmallows because it is easier to melt and you would be able to stir the lumps away much quicker than if you used regular sized marshmallows.
I discovered that using white marshmallows would allow for a range of different colours once I added food colouring. The recipe goes as follows:
A handful of white mini marshmallows
A tablespoon of water
Food colouring of choice
Castor sugar
Cake flour
Non-stick spray for baking
Method:
Place the marshmallows in a bowl and add the water. Put the bowl of marshmallows in the microwave for about 20 seconds. Apply the non-stick spray to the spoon which will be used for stirring. You should have a bowl of gooey marshmallows. If there are lumps, quickly stir to get a smooth consistency.
Add a few drops of food colouring and stir.
Add a few teaspoons of castor sugar (more can be added depending on how sweet you want the fondant to be)
Add 4 tablespoons of cake flour and stir. Apply the non-stick spray to the kitchen counter where the fondant will be kneaded.
Using your hands, knead the fondant to ensure that everything is smooth.
You can now cut and shape as desired.
Unfortunately, we did not have black food colouring so we had to settle for green instead! But it looks like a minion right? Either way, the child who received it was very very happy!
