It's been long journey for me in this industry meaning I have seen lots of managers and management.
Most of the managers, basically 95% of them come from staff positions. When they are staff they always complain about things they do when they become managers/supervisor.
I have been working in hospitality in 2 countries. In many places, managers works with fixed incomes and bonus. The bonus thing works most of the time yearly but to get this they are able to run places with less staff than they should or send people home even if they arrived at his position 1h ago, or serve out of date products as drinks or try to rescue fruit from a basket where it is some mouldy fruit in it. This is few examples.
During lockdown many of people working in hospitality swap to other industries, why? Spending quality time with family,friends or time of for themselves. I totally understand because you work long hours maybe for 100-200 quid a month and when people realise that you spend all day working and you spend more time at work than yours something start to clicking and maybe you want to earn less but have nice or quality time. And now hospitality industry in big cities is missing staff and the staff they have they work more and more.
Now, I would like to talk about people when they arrive to a new country with new language and they don't have a fully or proper understanding of the language. When you arrive in a country that you don't understand the language you will work in cleaning, hospitality, etc.. unless you have a software engineer or degree or hiper higher qualification and you can work in your language, it is fair enough and nothing against that. The problem is when managers hire this people and they shout at them when they do something that they don't understand or making jokes about them or insulting them as a joke or not.
It is a hard industry with none well paid wages, well managers and super managers they get more. Of you want a pay rise you have to go and beg for it (I understand why now) and once you beg for it you need to give some explanation why you asked for it. Company's need results and profits but sometimes bosses should take a look at your staff and give them some extra motivation or just tell them you are working hard and doing good this is your pay rise. Doesn't matter if you work hard or not because could happens 2 things; sacked or stay. Maybe this happens with all the company.
Just this few notes and be kind with your waiter/ waitress and of there is something ask for managers that sometimes they don't want to deal with costumers and only deal with them when the situation is out of control.
