THIS RECIPE IS MY INTERPRETATION OF A CLASSIC ITALIAN DISH.

INGREDIENTS:

2 AUBERGINES

300 GR TOMATO SAUCE

250 ASIAGO CHEESE

200 GR GRANA PADANO

FRESH BASIL

PREPARATION:

CUT 7 MM THICK AUBERGINES INTO SLICES SALT AND LEAVE TO REST,

RINSE AND GRILL THE AUBERGINES.

IN A COCCOTE, MAKE LAYERS OF ASIAGO AUBERGINES IN STRIPES, PIECES OF BREAKED BASIL, TOMATO SAUCE AND GRAIN

. USUALLY MAKE FROM THREE TO 5 LAYERS MAXIMUM DEPENDS ON HOW HIGH YOU WANT IT.

PUT IN THE OVEN AT 200 DEGREES FOR 15 MIN. SERVE HOT.
