Hello chocolate addicts !
Yesterday we have visited a small artisanal chocolate factory in the east of French Guyana :
Cacao d'Amazonie
The owner of the factory is Mr. Dummett Olivier who started his production in 2005.
Cacao d'Amazonie have two majors particularities
First the raw material come only from wild trees of cocoa ! No plantations here, all the cocoa pods are gathered from old french plantations of the 19th century. They have been abandoned since the middle of this century so the trees are mixed with the rainforest !
Second Mr. Dummett is very requiring to produce from bean to bar. Which means that he can master all the process. That allows him to give specials flavours to his chocolate.

Final grinding !
Some sugar his added to this pure cocoa paste. Mr. Dummett have also created some "cocktails" which can include : sesame, salt, ginger, chilli pepper, or coconut !
All of them are absolutely delicious !!
