Bullish Protein Snickerdoodle Muffins

Sup Bull Gang! Long time no see! I’ve been taking a bit of a hiatus from the site as I’ve just not been online as much lately, work is busy and prosperous lately and I’m quite proud to say today is the first day off I’ve taken in about two weeks, fully by choice. Hard work will set you free and days off are for libs. But with all this hard work, I need to fuel up hard too, and lately I’m always looking for more protein sources. I mix protein powder in everything from my coffee to my burgers, and I’m very happy with the boost it’s been giving me. Today I’m bringing you a recipe for a healthy, tasty, high protein snack that’ll pack well wherever you’re going. Protein-packed snickerdoodle muffins - Bull Gang style. Each of these light, delicious muffins packs ten grams of protein and just five grams of carbohydrates.

INGREDIENTS:

1/4 Cup All Purpose Flower

2 Scoops Protein Powder

1 Teaspoon Baking Powder

1/2 Teaspoon Ground Cinnamon 

1/4 Cup Brown Sugar

1 Large Egg

1/3 Cup Light Butter

1/4 Cup Unsweetened Apple Sauce

1 Teaspoon Vanilla Extract

FOR TOPPING:

1/2 Tablespoon Sugar Substitute 

1/4 Teaspoon Ground Cinnamon


Alright gang! To start off, preheat your oven to 350F and spray a muffin tray with some nonstick cooking spray. 
Crack that egg in a bowl and whisk it together with the butter, apple sauce, brown sugar and vanilla until smooth.

In a separate bowl, mix together the flour, baking soda, 1/2 teaspoon of cinnamon and the protein powder. Once they’re mixed well, combine the two bowls, then transfer the batter into the baking tray. Sprinkle the top with your sweetener and the rest of your cinnamon.

Bake for 20ish minutes and they should be ready, you can test them by puncturing from the top with a toothpick; if it comes out clean, they’re ready. 

Munch on these, get your pump on, and keep stacking muscle and sats through this bull market!
