What’s up my hungry hungry bulls! I’m up late so I figured I’d make some lunch for work tomorrow! We’re gonna make some chicken burritos!
2lbs skinless, boneless chicken thighs
5 cloves garlic
3 tbsp chilli powder
1 tbsp coriander
1 tbsp cumin
30 ounces tomato sauce
1/4 cup cilantro
Pre-heat your ovens to 275°F. Chop up all your garlic and onion and put it to the side for now. Maybe whisper some sweet words to them, make sure they know you won’t be leaving them alone too long, abandonment is a really scary thing and they may have felt that pain before. In a small bowl, combine your chilli powder, coriander, and cumin.
Take the chicken and coat it in those spices, really rub it in and make sure you get it stuck on there, we don’t want it running away.
Get your Dutch Oven and put it over medium heat with some vegetable oil. Add the onions and garlic and cook until softened (probably about five minutes). Sprinkle salt, pepper, cumin, coriander and chilli powder, and mix.
Add the tomato sauce and the chicken, making sure to fully cover the meat in the sauce. Cover and place in the oven for 4.5 hours.
After slow cooking, transfer the chicken to a bowl, it should tear and shred apart nice and easy. Combine with the cilantro and wrap it up in a burrito, it’s all ready to serve. Delicious 🤤
